Right now I am only interested in using text, i.e. words, monograms, names, etc. Based on what I've read, digitizing software is necessary. Is that accurate? If so, what do you suggest? Thanks!

How do you embroider a word in one color and then outline the word in another color with the stitches.

hi
Generally, you have to digitize the outline.
Depending on the software level you have, you may also be able to apply an outline offset, and convert that.

The best results are henetally when you digitize that though, because the results you get will depend on your fabric, and the type of outline you want to apply (perhaps satin border or runstitching)
